If you can, try to keep the shower and laundry stuff in your plan, going to a Laundromat or public place to do this stuff can be stress (PITA) you don't need.
Your inverter should be built powerful enough so that there is plenty of head room for running more loads than you initially plan, typical of many solar off grid users, we find more things later we can plug in and use.
