Do you want to build something with things you have laying around? Budget?
You have some testing gear? (oscilloscoop, voltage/current meters)
There are lot's of ways to achieve what you want.
On what rpm is the generator running and how many phases?
You can boost the voltage with a boost converter or smps to +-180V and then use 4 igbt's and LC filter to make you 120VAC.
Alternative you can use a toroidal or other type transformer like most of us to convert your low voltage AC to 120VAC.
Both possible with the egs002 module.
