I am the same.
I cook my fried eggs on a low heat (if it bubbles and spits, it's too high) so as not to cause the edge to burn - hate that scarf. Once the egg has started to cook and is no longer running around the pan, gently splash the oil over the top of the yolk until all the white is solid. Use a wooden spatula - a metal impliment wicks the heat away from the oil.
This method cooks the white and leaves the yolk nice and dippy.
