The USB stack is running on the Pico, not the interface chip. That is merely a USB hub. *if* the USB stack on the Pico can be persuaded to see the combined keyboard/mouse as a USB hub with two connected devices then it might work, but I don't know if those dongles work like that. You are reaching the limit of two hubs on the Pico.
