SPI is serial so there probably wouldn't be much speed loss. Without MISO there can never be data whatsoever from the LCD. I just looked at the schematic. It's a good board to avoid. :) They've skimped on pins and sacrificed MISO as it's not needed in many cases. As usual they've used GPIO pins for the SD card that they don't need.
