Not that I am aware of.
The uM chip is not fast enough, nor does it have enough memory to be able to squirt out colour either in composite or VGA.
From my understanding, on the MaxiMite, the VGA or composite is clocked out of the chip from the raw C code in the background - it is not something you can do from within the MMBASIC language.
However - why don't you get yourself one of the cool MicroMite Companion kits like I have just got? A uM driving a powerful graphics controller - should suit you down to the ground. Smoke makes things work. When the smoke gets out, it stops!

My whole interest is audio out ..
