Could you communicate with a stock chip ?

If you mean could you put a MicroMite in the sea-of-holes in CG's CMM unit, and then talk between them, then yes - no problems. Use either I2C or serial.
Smoke makes things work. When the smoke gets out, it stops!

Could the CMM simply act as (in the same way) a VT100 ?

Yes, but you would have to write a terminal code for the CMM in MMBASIC.

Do-able, but I would just go for the existing VT100 unit - why re-invent the wheel?(rhetorical)
