would it be fine to use 2 tip41c transistors insted of 2 tip3055 for power supply?
have two of these and think they are a newer model then tip3055 , but not sure.
hard tofind anything on google about suplimenting them.

Depends on how many amps you need. 2n3055s have a max current of 15A or so? tip41cs maxs out to 6A

my transformer is rated 11 amp. i dont think i would ever use more then 5 amp , so two tip41c should be fine

am i correct in thinking that if transformer is rated 11 amp that that would be the max regardless how many tip s i use

No, any transformer is certainly capable of producing more current than what it is rated for.
The main thing that limits it is are its internal losses and winding resistances.
In my supply even though the transformer I have is rated for 18v at 2 amps I can get at least 3.5-4 amps out of it at 14v of output voltage after the regulator.
However it does get quite warm (hot) after a short period of time under those conditions. ;)

You may want to use more than 2 tip41cs. One more will allow you to distribute the heat a little more and will give you a little more headroom between the transistors max current and your actual. The tradeoff will be between the cost of the heftier heat sinks and the cost of the additional transistor (and heatsink).
*edit* whoops, I missed your 5A max comment. I'd think two 41c transistors should be fine for that. I havn't actually read the datasheet or gone through the design process. You may want to do that.Edited by powerednut 2015-06-11
