Is there any text or book that teacher’s how to program an colour LCD panel.

Look in the MM manual under "LCD Displays", "Touch Support", and "Using an LCD Panel"
starting at page 20.

I would recommend 'Getting started with the micromite' and 'Micromite Manual'.
Both from the same place you get the firmware.
